Thought we deserved a thread of our very own for all those goodies to go with our drinks...we'll be on our lips @ Happy Hour if we don't eat anything! LOL!

BLT Dip (so good with wheat thins!)

INGREDIENTS
1 pound bacon
1 cup mayonnaise
1 cup sour cream
1 tomato - peeled, seeded and diced


DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain on paper towels.
In a medium bowl, combine mayonnaise and sour cream. Crumble bacon into the sour cream and mayonnaise mixture. Mix in tomatoes just before serving.

(You can also serve this with traingular wedges of toasted bread or sliced, toasted baguettes. Either way it tastes just like a blt sandwich only much handier for those dipping days in ront of the BC or big game. A huge hit every time!!)

I can't be there, :( but this is something someone could whip up for use... my ex used to be a HUGE WWE fan, and this is from their cookbook

SPICY BLACK BEAN DIP
1/4 lb. bacon
1 large onion
2 cloves garlic
2 tsp oregano
1/4 tsp. cayenne pepper
2 1/2 tbsp. chili powder
1 (16oz) can of diced, peeled tomatoes
1 (4oz) can diced green chili peppers
2 (16oz) cans black beans

Saute bacon in large saucepan over medium heat until light brown (about 10 minutes). Add 1 large, peeled, coarsley chopped onion and 2 lage, peeled, chopped garlic cloves. Saute until onions are translucent. Add oregano, cayenne and chili powder. Add tomatoes (transfer to a clear glass bowl first--it eliminates a metallic taste to the tomatoes) and green chili peppers. Add black beans. Simmer until thick, stirring frequently (about 12 minutes). Season with salt and pepper.

It's a bit too hot for me, but the few times I've made it, people have raved about how good it is with tortilla chips.

if you race in Nebraska you forage(steal) a feedsack full of field corn dump into hotwater can and by time you are done rubbing your horses lunch is ready.

in new mexico for renovation break you fry a couple of eggs in a electric skillet lay them on a flour tortilla with some hatch chile strips and you will last till noon.

at thistledown in winter hot chocolate with a liberal amount of peppermint scnapps will make
life bearable.

there used to be a man at churchill that would sell chicken sandwiches two slices of bread with a piece of fried chiken in the middle-no choice on which piece of chicken either.

at sunland park one of our grooms wife had a burrito stand in jaurez each day she would send two roasters full for him to sell at the break.

oaklawn park had the best cinnamon rolls anywhere.

my buddy on the stable gate at centennial would bring a crock of home raised onions and cukes in oil and vineger for us a large snack on monday evenings.

at Santa Anita the cancer truck was better than the kitchen .

at Evangiline downs the kitchen lady would gladly fix your grits any number of ways -still don't like them!

a big treat in louiseville was the toadstool inn provided you liked fried chicken -roast port or roast beef

can you tell yet that I count on everybody else for the good stuff??? LOL....

I used to cook and all that, but as the kids have gotten older life has gotten crazier and I just can't seem to get organized enough to work, run a house, go to 15 different classes/practices/games, look after 3 horses, and still cook a meal. When I walk in the door at 8-9 pm dinner better be waiting for me!!

jockey bobby harmon was a natural at weight he would walk out to get on a horse in the paddock eating a piece of fried chicken or a snickers bar-the poor guys that had just got out of the hotbox and stuck their finger down their throats would lose the race at that moment.

Ray Sabourin is (or was when he was younger anyway) the same way. He'd show up at parties and eat more than 3/4 of the people there, I swear, and ride the next day.

Well, Emerald Downs has just about the BEST garlic fries around! I swear they are sooooooooo good but you better have a TON of gum in your pocket!! LOL!




Here's a DELICIOUS chicken recipe that can be done in one pot ( I like to serve mine with white or brown rice):



SUNSHINE CHICKEN



1lb boneless, skinless chicken, cubed

1 1/2 Tbs. Flour

1 Tbs. E.V.O.O. (olive oil for those who are not Rachel Ray fans)

1 medium onion, cut into wedges

2 Celery stalks, sliced

2/3 cup orange juice

1 1/4 Cups Chicken stock or broth

1 Tbs. Soy Sauce

1-2 Tbs. Honey

1 Tbs. grated orange rind

1 orange bell pepper (yellow will work too but orange looks the best)

1 Zucchini sliced into half circles

2 small corn cobs, halved or 3 1/2 oz. baby corn

1 Orange, peeled and segmented

salt and pepper

1 Tbs. chopped fresh parsley for garnish



Season chicken cubes and coat with flour and salt and pepper. Reserve any remaining flour.



Heat the oil in aheavy bottom skillet and cook chicken over high heat, stirring frequently, for 5 minutes or until golden on all sides and sealed. Transfer cooked chicken to a plate and set aside.



Add the celery and onion to the skillet and cook over medium heat, stirring frequently for 5 minutes or until softened. Sprinkle in the reserved seasoned flour and cook stirring constantly for 2 minutes. Remove from heat and gradually stir in the orange juice, chicken broth, soy sauce,and honey followed by the orange rind, then return to heat and bring to a boil, stirring.



Return the cooked chicken back to the skillet. Reduce heat and cover, simmering for 15 minutes, stiurring occasionally. Add the orange bell pepper, zucchini, and corn cobs and simmer for an additional 10 minutes or until the chicken and vegetables are tender. Add the orange segments, stir well, heat through and serve, garnishing with a sprinkling of parley.

It's pretty easy...(and pretty to look at)...especially with a tossed green salad and a sparkling, crisp white wine. I like Sauvignon Blanc. Bon Apetit!

Sunshine Chicken is awesome. Thanks!!!! Even the kids ate a ton of it and I usually get all kinds of grief from them about peppers and onion and stuff like that.

I am so glad you liked it! I told you it was yummy and easy too! LOL! I like Basmati or Jasmine rice with it the best I think. I also found a really good "game day" snack or a quick weeknight mean that goes great with some tator tots or french fries.



Sloppy Joe Crescents



Prepare sloppy joes according to package directions. Stir in 1/3 Cup of shredded cheese (I use Cheddar). Open 2 cans of Pillsbury crescent rolls and unroll dough, dividing into 4 squares (or 8 if bite sized snacks are desired) per can. Flatten into rectangles and cut in half diagonally making 8 triangles. Place 1-2 tablespoons of sloppy Joe mixture in the center of each triangles and then fold in half, carefully seaming the edges to avoid leakage during cooking. With a fork or knife, perforate the tops to vent the steam. Beat one egg and brush tops with egg and sprinkle with sesame seeds (optional). Bake in a 350 degree oven for 10-18 minutes or until golden brown. Immediately remove from baking sheet and serve warm with french fries, tater tots or salad.
